Many people are becoming more aware of and worried about their health. We're trying to take in as many items that are high in vitamins and minerals required in the body each day. Vitamin b7, more popularly referred to as biotin, is one vitamin we all need to have daily to help provide us with enough energy.

This Greek chicken liver recipe will not only fill you up with your required volumes of vitamin b7 and other vital vitamins, but will also take your taste buds on a tantalizing journey to the Greek Isles without you having to leave your own home.

YOUR INGREDIENTS

1 lb of eggplant, sliced just about inch thick

5 tbsp of flour

1 tsp of salt

2 tbsp of vegetable oil (any kind of oil may be substituted)

4 tbsp (about of a stick) of butter

1 pounds of chicken liver, cut and washed

1 medium onion, sliced teaspoon of finely chopped basil

1 can of chicken broth, condensed 2 tomatoes, ripe, peeled and cut

2 tbsp of chopped parsley

PREPARE YOUR MEAL

Blend 3 tablespoons of flour and salt Dip the eggplant into the mixture and set on a platter

On a good-sized frying pan, combine oil and two tablespoons butter and saute the eggplant for around three minutes or up until desired texture of the eggplant is obtained

Take a serving dishes and align the fried eggplant pieces with overlapping borders

Set eggplant aside

On the same large pan, add the remaining butter and saute the onions and liver until cooked through.

This usually takes around six minutes to cook.

Add remaining flour and spray crumbled basil

Add your chicken broth and continue cooking

Keep under medium heat until mixture thickens and boils. This will likely take just about 1 minute

Add the tomatoes and cover the pan

Lower heat and allow it to simmer for around five minutes

To serve, place the mixture in the middle of the eggplant and you're now ready to dig in.
