Using a Torch Lighter to Melt Cheese on Gratins

Creating melted cheese toppings on your gratins can be quite simple. Chances are, if you have tried to create gratins in your stove, you are thinking that this sounds absolutely untrue. In order to create the perfect gratin, you will need a cooked gratin, without the topping, shredded trees and bread crumbs, and a torch lighter. Just think about what makes up the perfect gratins. Of course, the ingredients inside will be important, but one of the things that makes a gratin everything you expect it to be will be the top crust. That crust should be a unique combination of crispy and creamy. It should include perfectly thickly melted cheese along with perfectly browned bread crumbs. If you try to make this happen in an oven, chances are, it will not work well. Either the bread crumbs will get too brown or the cheese will not melt in the right way. You will need to begin by creating and cooking the gratin as usual. You will not want to do anything to toast the surface however. This is the part that will be achieved with your torch lighter. When using the lighter, turn the temperature up to medium high since you will need a fairly strong heat to melt the cheese and toast the bread.

Create the topping mixture of breadcrumbs and shredded cheese and then sprinkle it in a thick layer on top of your gratin. Next, with the torch set to medium high and held about two inches above the gratin, pass the torch over with slow, even strokes. Be sure to keep the torch moving so that you do not burn any one area. You will need to work with the torch for a number of minutes in order to properly melt the cheese. When the breadcrumbs begin to brown and the cheese bubbles, you will know you have cooked the topping to perfection.

When you make use of the lighter to melt the cheese on your gratins, you will find that you are able to create that perfect combination of crispy and creamy that you experienced in those fine restaurants.
